Make a fresh green sauce, any time of year.
Soft herbs and similar tender greens are reliably delicious and available anytime, which means a perky green sauce can be, too. To use up whatever you have on hand, combine 2 packed cups greens with 1 cup grated Parmesan, ½ cup nuts, ½ cup olive oil and some garlic. The greens can be parsley, basil, mint, dill, arugula, spinach, carrot tops or beet greens. Use a mix or just one, but know that some, such as mint and dill, are more flavorful than others, like parsley and spinach. The nuts, which add heft and creaminess, can be walnuts, hazelnuts, almonds, pistachios or pine nuts. (Keep them raw for a milder sauce.) You can swap the garlic for scallions, shallots, chives or other spring alliums. Chop all the ingredients together and it’ll smell like spring inside, too.

- instant pot lasagna see comments for suggestions, also notebook. Short answer is that instant pot kept going to ‘burn’, I subbed 10oz of the marinara w spinach, added 8 instead of 2 oz tomato paste, and after it sat in the fridge a day or two it was was particularly good, as opposed to soupy when it first came out of the cooker.

- N.b., on 24jan21, I listened to an NPR interview by terri gross by a researcher who studies aboriginal people. Who, among other things, bliss out on honey, sit around whenever they can, sleep the same amount as westerners (about 7.1 hours is ideal, evidently not 8) but have no diabetes. Well, they move around a lot to live their lives. Also, they may sit, but they're constantly getting up, and those little bitty interruptions are important. Plus, sugar is sugar.
Onion recipes...
Not raw but close, is my fridge staple: marinated red onions Mexican style. Instructions: Cram as many thinly sliced red onions as you can stuff in a jar. Throw in dried red chili, peppercorns, bay leaves, coriander seeds, dried anise or juniper berries, or whatever combo you enjoy for spice. Boil up equal measures of cider vinegar and water, with a spoonful or two of sugar and a good dash of salt. Pour hot liquid over the sliced onions and let cool. Store in refrigerator. You’ll always have beautifully colored pink onion for for your sandwiches, burgers, tacos, salads, or avo smash. Enjoy!

- boil 30 seconds
- simmer 11 minutes
- place in ice water bath before peeling, 15 minutes
- really will be delish & easy to peel.

- cashew milk teal deer: soak cashews in water; add vanilla, salt, sweetener if desired; here's a round of non-dairy ‘milk’ recipes (short version: To make about 750ml, soak 50g of oats, hemp, brown rice, seeds or nuts overnight (if you have time) then drain, rinse and blend with 800ml of water for one minute. Sieve, use w/in 7 days.)

[1]And yeah, it's probably obvious that I like science-y type cookbooks that get into why things work and all the different ways you can put them together. I think maybe that's something that people complain about when they say, "but it's so hard compared to heating up a hunk of meat!" Because it's not, really, unless you're comparing "microwaving a frozen burger" to "preparing a 10-course Indian wedding feast". But if you don't have the mental toolbox of what all your building blocks are, you do have to think harder about putting a meal together. –cat meadows
