German coffee cake
N.b. half recipe can easily be made in an 8x3x2 loaf pan—just reduce milk to compensate for the doubled egg
topping
- melt 1 T butter in a medium sized microwave safe bowl; then add
- meanwhile chop 1/2 – 3/4 C walnuts or pecans
- 1 T (approx) of molasses
- 1/4 C white granulated sugar
- 1 t cinnamon
- 1 t chai spices
- 1/2 t ea ginger, cloves
- 1/4 t nutmeg
cake –no spices or nuts!!!
- spices, brown sugar & nuts go only in the topping!
- 1 C flour, or 2/3 C whole wheat & 1/3 C white flour (pastry preferred)
- 1/2 C butter —cut into flour with pastry knife till rice grain sized
- mix in measuring cup (to grind out lumps) & add to above
- 1.25 t baking powder
- 0.5 t salt
- 0.25 baking soda (only if subbing buttermilk/adding yogurt)
- 2 T white granulated sugar
- make well, and add
- 1 - 2 eggs
- 1/2 milk; can add or substitute
- 1/4 C yogurt or buttermilk
- mix till just moistened w rubber spatula
- grease 8" pan
- spread batter, mix topping (with the same spatula – in the big mixing bowl if necessary) & spread on top
- bake 16 minutes, 375 (preheated) oven; closer to 20 from cold.
