Candied orange and sriracha muffins
hot'n'spicy!
Given the OJ, these are obviously based on cranberry orange muffins
Notes: make overcooked candied peel, & grind up in blender...
- 1 C ground candied peel (sugar!!!)
- 1/3 C chia seeds
- 1/2 C flour
- 1 C oatmeal
- 2 T ground flax meal
- 1-1/4 t baking powder
- 1/4 t baking soda
- 1/4 t salt
liquid ingredients:
- 1/4 C thawed orange juice concentrate
- 1 T canola oil
- 1 egg
- 1/4 C sriracha
- 1–2 T water (as needed to adjust batter)
mix dry ingredients, grinding out any lumps; beat together wet, then add to dry until just moistened. Divide batter equally into well-sprayed (pam) muffin tin, bake at three hundred something-something—375? for 19 minutes (all that sugar browns & crisps outside very readily).
Notes: crunchy on the outside, with chewy bits of peel, and spicy. Good with cream cheese:)
