Candied orange and sriracha muffins

Given the OJ, these are obviously based on cranberry orange muffins

Notes: make overcooked candied peel, & grind up in blender...

Spicy sriracha & candied orange peel muffins, photographed on S4, 31mar2015

  • 1 C ground candied peel (sugar!!!)
  • 1/3 C chia seeds
  • 1/2 C flour
  • 1 C oatmeal
  • 2 T ground flax meal
  • 1-1/4 t baking powder
  • 1/4 t baking soda
  • 1/4 t salt

liquid ingredients:

  • 1/4 C thawed orange juice concentrate
  • 1 T canola oil
  • 1 egg
  • 1/4 C sriracha
  • 1–2 T water (as needed to adjust batter)

mix dry ingredients, grinding out any lumps; beat together wet, then add to dry until just moistened. Divide batter equally into well-sprayed (pam) muffin tin, bake at three hundred something-something—375? for 19 minutes (all that sugar browns & crisps outside very readily).

Notes: crunchy on the outside, with chewy bits of peel, and spicy. Good with cream cheese:)
